Sous Chef
Premium Regional Hotel | Victoria
A landmark regional hotel is set to reopen following an extensive, multi-year restoration, relaunching as a premium hospitality destination with multiple dining concepts, bars and boutique accommodation.
This is a rare opportunity for a strong Sous Chef to join a leadership team ahead of opening and play a key role in shaping the kitchen culture, systems and food offering from day one.
The Role
As Sous Chef, you will work closely with the Head Chef and senior leadership to support all culinary operations across the property. This is a hands-on, high-impact role suited to a chef who enjoys structure, standards and mentoring teams in a dynamic, multi-outlet environment.
You will contribute across several offerings, including:

A 50-seat formal dining room, delivering refined, European-influenced cuisine with a strong seasonal focus

A modern Australian bistro, offering elevated, produce-driven fare in a higher-volume setting

A boutique breakfast and café operation, featuring a concise, creative breakfast menu alongside coffee and pastries

A bar food program, producing seasonal snacks and canapés to complement a curated beverage offering
With kitchen handover scheduled prior to opening, you will be involved in pre-opening preparation, systems development, supplier relationships and back-of-house recruitment.
About You

Proven experience as a Sous Chef (or strong Senior Chef de Partie ready to step up) in quality restaurants or hotels

Experience working within structured kitchens with high standards and clear systems

Strong organisational skills with the ability to lead services and support junior chefs

Passion for seasonal produce and modern Australian / European-style cooking

Commercial awareness, including food cost control and waste management

Calm under pressure, professional and team-focused
