Hastings People is partnered with a premium coastal hospitality venue in the Ballarine Coast, Victoria, preparing to reopen following a significant renovation. This boutique operation offers both refined dining and relaxed bistro service, underpinned by a strong focus on quality, professionalism, and guest experience.
The venue features multiple dining formats, a newly built state-of-the-art kitchen, and a leadership team committed to long-term development and sustainable hospitality.
The Role:
The Client is seeking a Sous Chef to play a key leadership role within a professionally structured kitchen team. Reporting directly to the Executive Chef, this position will be instrumental in the execution of service across both fine and casual dining offerings.
This is an ideal opportunity for a Sous Chef who thrives in hands-on leadership, values mentorship, and wants to be part of a reopening phase where standards, culture, and systems are set from the ground up.
Responsibilities:

Support the Executive Chef in the development, costing, and execution of seasonal menus

Lead service across sections, ensuring consistency, quality, and efficiency

Train, mentor, and motivate junior chefs, apprentices, and CDPs

Maintain high standards of food safety, cleanliness, and regulatory compliance

Assist in stock control, ordering, and wastage management

Foster a positive, respectful, and professional kitchen culture

Contribute to operational improvements and service refinement as the venue evolves
Requirements:

Proven experience as a Sous Chef or strong Senior CDP in a quality-focused environment

Background in fine dining, premium casual, or boutique hotel kitchens

Strong leadership and communication skills with a collaborative approach

A hands-on, organised, and calm leadership style during service

Solid understanding of food safety, compliance, and kitchen systems
