Hastings People is partnered with a well-established, premium hospitality group operating an exciting and diverse range of restaurants including a beloved french Patisserie and Bakery.
The operation brings together bakery, pastry, and restaurant service under one roof, supported by experienced leadership and a professional, detail-driven culture.
The Role
The Client is seeking an accomplished Head of Pastry to lead and evolve the pastry and viennoiserie program. Working closely with senior baking leadership, this role will be central to maintaining technical excellence while driving consistency, creativity, and team development across a high-volume environment.
This position suits a senior pastry professional with deep technical capability, strong organisational skills, and a hands-on leadership style.
Responsibilities:

Lead the pastry and viennoiserie offering across bistro, boulangerie, and retail production

Uphold exceptional standards across sourdough, laminated doughs, viennoiserie, and refined pâtisserie

Plan and manage production to ensure consistency, efficiency, and quality at volume

Train, mentor, and develop junior bakers and pastry chefs

Maintain rigorous food safety, cleanliness, and compliance standards

Collaborate with senior leadership on menu development and seasonal evolution

Foster a disciplined, positive, and professional kitchen culture
Requirements:

Senior-level experience in French pâtisserie within premium bakery or restaurant environments

Advanced technical skills across sourdough, viennoiserie, laminated doughs, and classic pâtisserie

Proven experience leading teams in high-volume production settings

Strong organisational, planning, and time-management capability

A refined eye for detail, presentation, and consistency
