Job Description
The Client is seeking a Head Chef in their venue in Far North Queensland, just outside Port Douglas, known for its friendly atmosphere, great food, and role as a true local gathering spot. The role will lead the kitchen and deliver high-quality, authentic pub dining to the community and visitors alike.
About the Role
This is a hands-on leadership position where you will take full ownership of the kitchen operations. You'll create seasonal menus that celebrate quality produce, oversee day-to-day service, manage costs and suppliers, and develop a strong kitchen team culture.
As part of the leadership team, you will collaborate with the Venue Manager to ensure the food offering supports the venue's reputation as a vibrant, welcoming hub for locals and travellers.
Key Responsibilities:
- Lead and inspire the kitchen team, ensuring a consistently high standard of food.
- Design, cost, and implement menus that suit a regional community pub and seasonal produce availability.
- Oversee ordering, stock control, and supplier relationships to achieve food cost targets.
- Maintain a safe, clean, and compliant kitchen environment, upholding all Food Safety and OHS standards.
- Train and mentor junior chefs and kitchen staff, fostering a positive and motivated culture.
- Work closely with venue management to support events, functions, and community activities.
Requirements:
- Proven experience as a Head Chef (or strong Sous Chef ready to step up) in a busy pub, hotel, or regional dining venue.
- Strong leadership skills with the ability to build, train, and motivate a team.
- Sound financial understanding, particularly in menu costing, stock management, and achieving wage/COGS targets.
- Passion for community hospitality, with a hands-on and approachable style.
- Excellent knowledge of Food Safety and OHS compliance.
- Flexibility, creativity, and the drive to deliver a memorable dining experience.
