Our client is a distinguished regional estate nestled in a regional Victoria, King Valley. The property is a luxury boutique hotel that also houses a signature upscale restaurant. They are now seeking a talented Head Chef or up and coming Sous Chef to step into a leadership role, to lead the culinary direction of this venue — a rare opportunity to craft a food narrative that embraces sustainability, regionality and creative freedom.
The Opportunity
As Head Chef, you will lead all kitchen operations with both precision and artistry, in a hands-on role where the food is integral to the guest experience. You will drive seasonal menu development, mentor the kitchen brigade, manage supplier and producer relationships and oversee cost and operational controls.

Requirements
- Proven experience as a Head Chef or Senior Sous Chef in a premium dining venue
- Experience working in a regional estate, winery or regional hospitality setting is preferred
- Passion for seasonality, provenance and quality
- Strong leadership and team-mentoring skills, with the ability to inspire and develop a kitchen brigade
- Exceptional menu design capability with a refined and confident food philosophy
- Solid background in kitchen operations including rostering, cost control and supplier management
- Outstanding communication and collaboration skills, especially aligning front-of-house and winery teams
- Hands-on leadership style with commitment to team development and growth
- Deep knowledge of hygiene, safety and compliance requirements in a commercial kitchen environment
