AFLOAT is a show-stopping ever-evolving floating bar and restaurant located on the Yarra River, operated by the design-led HQ Group (Arbory Bar & Eatery, HER, Coffee HQ). AFLOAT is an immersive venue that reopens and transforms each September with a brand-new theme inspired by iconic international destinations from the Amalfi Coast to Latin America. With a capacity of 1500 and a stunning riverside location, it’s one of Melbourne’s most recognisable venues.
Job Description
As Head Chef, you will oversee a team of 20–30 chefs and lead the development and execution of the venue’s seasonal food concept — from vibrant Mediterranean feasts to beach club-style pizza menus. Reporting to and supported by the Group Executive Chef, this is a unique opportunity that offers a fast-paced service from September to June, and a period of collaborative planning in winter to reimagine the next season’s menu and concept.
In addition to being accountable for delivering great, consistent food with excellent financial returns, you will be responsible for hiring, training, and developing a high-performing kitchen team. This is a hands-on leadership role where your influence will shape both product and culture.

- Proven leadership in high-volume, premium casual or large-format kitchens
- Experience developing creative, on-trend menus

- Passion for seasonal produce, bold flavours and great guest experiences
