This is your chance to shape a menu that pushes boundaries while honouring the soul of Japanese cuisine. You’ll have full creative control to design, cost, and execute seasonal, high-impact menus that blend refined technique with contemporary flair. Think robata meets modern plating, izakaya - style small plates with global twists, and the freshest ingredients reimagined with purpose.
You'll lead from the front—cultivating a passionate, high-performing kitchen team, fostering a culture of excellence, and creating a positive, fast-paced environment where talent thrives. As the culinary driving force of the venue, you'll collaborate closely with the General Manager ensuring every dish aligns with our brand’s elevated identity and high standards.

Candidate Profile
To be considered for this role you will have:
- Proven experience in Japanese or Japanese-fusion cuisine
- A creative edge and strong business acumen
- A leadership style that inspires, coaches, and drives success
- Experience as a senior chef in a restaurant style offering in Australia or internationally
- Exceptional management skills and the ability to lead, coach and mentor a high performing team
- A hands-on approach and the ability to strategically plan seasonal menu changes
- High-level communication with colleagues, suppliers and customers
- A positive and consultative approach to your peers
- The ability to review operational performance and make improvements where necessary
- Complete understanding of regulatory compliance across food
- Full Australian working rights
This role is offering a competitive package comprised of a generous base salary plus super, along with the prospect of overseeing future venue acquisitions.
