The Role:
The Client is seeking an accomplished Head Chef to lead the culinary direction of a premium, all-day dining restaurant inspired by Italian tradition with contemporary expression. Reporting into senior food & beverage leadership, this role will be responsible for setting the culinary vision, building a high-performing kitchen team, and delivering an outstanding dining experience from morning through evening service.

Responsibilities:

Lead and define the culinary vision, delivering Italian-inspired menus with a modern approach

Oversee all daily kitchen operations, ensuring quality, consistency, and smooth service execution

Design and implement seasonal menus aligned with the restaurant’s identity and guest expectations

Maintain exceptional standards of food safety, hygiene, and regulatory compliance

Manage food costs, budgets, and supplier relationships, identifying efficiencies without compromising quality

Recruit, train, mentor, and inspire a cohesive kitchen brigade

Foster a positive, professional, and collaborative kitchen culture

Work closely with broader hospitality leadership to align the restaurant with wider business objectives and activations
Requirements:

Minimum 5+ years’ experience as a Head Chef or Senior Chef in a premium Italian restaurant, luxury hotel, or high-end dining environment

Strong technical foundation in Italian cuisine, ingredients, and cooking techniques

Proven experience in menu development, team leadership, and cost control

Confident, calm, and organised leadership style in a fast-paced setting

Passion for seasonal produce, simplicity, and flavour-driven cooking

Valid Australian working rights
