Their latest project is set to be a standout: a richly textured, design-led dining room drawing inspiration from the late-night bistros of Paris and the stylish intensity of New York's restaurant scene. They are an established operator creating Iconic venues and great dining experiences.

Job Description

This is not just another restaurant opening – it’s a place where craft, produce, and principle meet. Think nose-to-tail, minimal intervention, maximum flavour, a concept that leans into heritage, reinterpreting traditional British fare with seasonal Australian produce and a contemporary touch. The team are looking for an Executive Chef with a clear culinary voice – someone who can let the food speak for itself, who knows restraint and understands the power of simplicity done well. You’ll lead kitchen design input, build your brigade, write and refine the menu, and set the tone for service, standards, and kitchen culture. Working closely with a supportive executive team, this is your chance to create something meaningful from the ground up and put your own mark on a venue with long-term potential.

Candidate Profile

As Executive Chef, you’ll shape and lead the food identity of the venue – from menu design and team structure to dish development and supplier relationships. The kitchen will serve as an extension of your ideas, backed by a group who understand what it takes to create something lasting.
To be considered for this role you will have:
  • A produce-first, nose-to-tail approach with a respect for provenance and seasonality
  • The confidence and clarity to let food do the talking – no overworking the plate
  • Previous experience at a high level – whether hatted, Michelin, or deeply respected in your region
  • Proven leadership, with the ability to mentor, grow and inspire a kitchen team
  • A hands-on, professional approach to operations, cost control and quality systems
  • Big-picture thinking and creative input from the ground up – you’ll have a voice at the table
