Our client is an exciting contemporary Vietnamese restaurant and wine bar that has quickly established itself as one of Double Bay's most talked-about dining destinations. Backed by experienced hospitality operators with strong family heritage, the venue blends authentic Vietnamese family recipes with a contemporary Australian café and wine bar experience, creating a unique neighbourhood venue.

Following a highly successful opening, the business continues to grow and is now seeking an experienced Sous Chef to become the operational backbone of the kitchen. This is a rare opportunity to join an ambitious venue early in its journey and help shape its next phase of success.

Job Description

Working closely with an accomplished Head Chef, you will take ownership of the day-to-day kitchen operation while helping establish strong systems, processes and team culture. This role is ideal for an experienced Sous Chef who enjoys leading from the front and building organised, high-performing kitchens.

With the venue evolving towards a restaurant and wine bar model, you will play a key role in maintaining consistency across lunch, dinner and weekend breakfast services while supporting seasonal menu development and future business growth.

Key Responsibilities

  • Lead the daily operation of the kitchen across lunch, dinner and weekend breakfast services.
  • Support and mentor a junior brigade through hands-on leadership.
  • Manage ordering, stock control and supplier relationships.
  • Implement and maintain kitchen systems, procedures and workflows, including Restoke.
  • Assist with seasonal menu development and ongoing product innovation.
  • Maintain exceptional food quality, consistency and food safety standards.
  • Support catering opportunities as the business continues to expand.
  • Work collaboratively with ownership to build a positive, high-performing kitchen culture.

Candidate Profile

You are an experienced Sous Chef who thrives in organised, fast-paced kitchens and enjoys taking ownership of operations. You have a strong background in quality casual dining, cafés or contemporary Asian venues and understand how to balance quality, consistency and efficient service.

While experience with Vietnamese cuisine is advantageous, your leadership, organisational ability and passion for developing strong kitchen systems are what will make you successful in this role.

You Will Bring

  • Proven experience as a Sous Chef in a quality hospitality venue.
  • Strong leadership and people management skills.
  • Excellent organisational and time management abilities.
  • Experience with ordering, stock control and labour management.
  • A calm, hands-on approach during busy service periods.
  • Passion for mentoring junior chefs and building positive team culture.
  • Exposure to Restoke or similar kitchen management systems will be highly regarded.
  • Experience with Vietnamese or modern Asian cuisine is desirable but not essential.
