Job Description

Our client is a highly regarded boutique hospitality operator renowned for delivering personalised guest experiences across accommodation, food and beverage, and events. With a strong reputation for quality, innovation and service excellence, they are seeking an experienced hospitality leader to oversee their flagship restaurant while supporting broader food and beverage operations.

Job Description

Reporting to the senior hotel leadership team, you will take ownership of the day-to-day operations of the hotel's signature restaurant while supporting service delivery across additional food and beverage outlets. This is a hands-on leadership role where you will lead from the floor, develop your team and ensure every guest enjoys an exceptional dining experience.

You will also play a key role in driving operational excellence, supporting conferences and private events, maintaining service standards and fostering a positive, high-performing team culture.

Key responsibilities include:

  • Lead restaurant operations and service during peak trading periods.

  • Coach, mentor and develop front-of-house team members.

  • Work collaboratively with the Head Chef to deliver seamless service.

  • Oversee reservations, service flow, guest recovery and table management.

  • Support operations across the restaurant, bar, in-room dining and events.

  • Manage rosters, labour costs and operational performance.

  • Ensure compliance with WHS, food safety and RSA requirements.

  • Identify opportunities to enhance service standards and operational efficiency.

Candidate Profile

You are an experienced hospitality leader who enjoys being present on the floor, developing people and creating memorable guest experiences. You bring a genuine passion for food, wine and premium service and thrive in fast-paced environments where no two days are the same.

You will ideally possess:

  • Experience as a Restaurant Manager, Venue Manager, Assistant Venue Manager or similar leadership role.

  • A background within premium restaurants, boutique hotels or quality multi-outlet hospitality venues.

  • Strong leadership, coaching and team development capabilities.

  • Excellent operational, organisational and communication skills.

  • A hands-on management style with a proactive approach to problem solving.

  • Knowledge of premium food and beverage service, with experience in Mediterranean, Middle Eastern or Levantine cuisine viewed favourably.
