With continued growth, they are now seeking a senior wine leader to bring cohesion and direction across the precinct.


Job Description

This is not a single-venue role. The Precinct Head Sommelier will take ownership of the wine program across multiple outlets, ensuring alignment in philosophy, execution and guest experience.
The position requires a sommelier who is equally comfortable on the floor as they are shaping lists, managing suppliers and guiding the direction of the cellar. You will operate across venues, working closely with chefs and senior operators to ensure the wine offering is both relevant and commercially sound.
  • Define and evolve a precinct-wide wine philosophy
  • Maintain a visible and credible presence on the floor across services
  • Curate and manage wine lists with depth, balance and intent
  • Work closely with suppliers and leverage allocation opportunities
  • Develop and mentor sommeliers and senior floor staff
  • Ensure consistency of wine knowledge and service standards across all outlets
Candidate Profile

You are an established Head Sommelier with experience in hatted or equivalent environments, and a clear point of view on wine.

This role is suited to someone who has already operated at a high level and is now looking to take ownership of a broader program, rather than a single venue.
  • Proven experience leading wine programs in hatted or equivalent restaurants
  • Strong technical knowledge across regions, producers and styles
  • Demonstrated ability to curate lists with both depth and commercial awareness
  • Comfortable operating across multiple venues and teams
  • Credible on the floor, with a service style that is confident and understated
  • Naturally collaborative, with the ability to influence without overreaching
