Our client is an internationally recognised ultra-luxury private island resort located in Fiji, catering to a discerning global clientele across couples, families, and multigenerational travellers. Operating within a highly personalised and service-driven environment, the resort is renowned for its exceptional hospitality standards, premium culinary offering, and strong focus on guest experience.
The property features multiple dining outlets, including all-day dining, in-villa experiences, and specialty restaurant concepts, with menus evolving daily to reflect seasonality and premium produce sourced locally and internationally. The culinary philosophy is ingredient-led, refined, and focused on genuine hospitality.
The Opportunity
An exciting opportunity now exists for an experienced Head Pastry Chef to lead all pastry and bakery operations across the resort. This is a hands-on leadership role overseeing plated desserts, bakery production, viennoiserie, cakes, gelato, event production, and staff dining requirements.
Working closely with the Executive Chef and culinary leadership team, the successful candidate will play a key role in menu development, operational leadership, and mentoring a skilled team within a boutique luxury environment.
Key Responsibilities
- Lead all pastry and bakery operations across the resort
- Oversee plated dessert production for multiple dining outlets
- Manage bakery production including breads, pastries, cakes, crackers, and viennoiserie
- Supervise, mentor, and develop pastry and bakery team members
- Contribute to seasonal menu development and daily menu changes
- Maintain exceptional luxury hospitality standards across all culinary offerings
- Support rostering, ordering, and operational management
- Participate in guest engagement and seasonal culinary activations
Candidate Profile
The ideal candidate will come from a premium restaurant or luxury hospitality background, combining refined pastry capability with strong practical bakery knowledge. This role is best suited to a chef who enjoys working within a boutique luxury environment and thrives in a collaborative, hands-on operation.
Successful candidates are likely to demonstrate strong leadership capability, adaptability, and a genuine passion for ingredient-led hospitality.
