Job Description

As Head Chef, you will take ownership of all aspects of the kitchen operation, leading an established brigade to consistently deliver high-quality food in a busy, fast-paced environment. This is a hands-on leadership role requiring creativity, strong commercial awareness and the ability to maintain exceptional standards across food, people and kitchen operations.

Key responsibilities include:

  • Develop and evolve menus that showcase a French-leaning, produce-driven approach
  • Lead, mentor and develop the kitchen team while fostering a positive, high-performance culture
  • Manage kitchen rostering and labour to achieve operational and commercial targets
  • Oversee ordering, supplier relationships, stock management and food costs
  • Maintain consistently high standards across food quality, presentation, service and kitchen operations

Candidate Profile

The successful candidate will be an accomplished Head Chef or experienced Senior Sous Chef ready to take ownership of a busy, premium waterfront operation. They will combine strong leadership and organisational capability with a sound understanding of French techniques and an appreciation for working with quality seasonal produce.

Key attributes include:

  • Experience leading or holding a senior kitchen role within premium or high-volume venues
  • Strong knowledge of French culinary techniques and produce-led menu development
  • Demonstrated ability to lead, mentor and develop established kitchen teams
  • Strong operational knowledge across rostering, ordering, stock management and cost control
  • A calm, organised and hands-on leadership style during high-volume service periods
