Our client operates a large-scale, food-led hospitality venue positioned within the premium pub dining market. Recognised as a flagship operation within a respected group, the business has built a strong reputation for quality food, high trade volumes, and a collaborative team culture.

With an already established kitchen structure and significant existing revenue base, the venue is now seeking a commercially minded culinary leader to further elevate standards, consistency, and overall food direction.

Job Description

This is a hands-on leadership opportunity suited to an experienced Head Chef who thrives in high-volume environments while maintaining a strong focus on team culture, food quality, and commercial performance.

Leading an established kitchen brigade, the successful candidate will oversee all day-to-day kitchen operations while partnering closely with venue leadership to support continued business growth across both à la carte and functions trade.

Key Responsibilities

  • Lead daily kitchen operations across a high-volume food service environment
  • Drive consistency, presentation standards, and service execution
  • Manage food cost controls, labour performance, and kitchen reporting
  • Oversee rostering, ordering, compliance, and operational systems
  • Develop, mentor, and lead an established BOH team
  • Support the continued growth of the venue’s functions offering

Candidate Profile

The ideal candidate will bring a strong combination of premium pub, gastro pub, or quality casual dining experience, paired with proven operational and leadership capability.

This role requires a chef who remains highly engaged in service while also demonstrating strong financial acumen, organisational skills, and people leadership.

  • Previous Head Chef experience within high-volume operations
  • Strong leadership and team development capability
  • Experience managing both à la carte and functions service
  • Sound understanding of labour management and food cost control
  • Strong organisational, reporting, and administrative skills
  • Hands-on, professional, and commercially aware leadership style
