Job Description

Reporting to the executive leadership team, the Director of Restaurants will provide strategic oversight and operational leadership across a portfolio of premium dining venues. This position is responsible for ensuring exceptional guest experiences, developing leadership capability, and delivering strong commercial outcomes while maintaining the culture and standards that have contributed to the group's success.

Key responsibilities include:

  • Leading, mentoring and developing General Managers and senior venue leaders
  • Driving consistency in service delivery, guest experience and operational execution
  • Managing financial performance, budgets and key operational metrics across the portfolio
  • Identifying opportunities for growth, innovation and operational improvement
  • Building and maintaining a high-performance culture focused on people, accountability and excellence

Candidate Profile

You are a proven hospitality executive with extensive multi-site experience across premium restaurants, hotels, hospitality groups or lifestyle brands. You are recognised for your ability to lead through people, create exceptional guest experiences and deliver sustainable commercial performance.

You will bring:

  • Significant multi-venue operational leadership experience within premium hospitality environments
  • Demonstrated success leading high-performing teams and developing future leaders
  • Strong commercial acumen with experience managing budgets, profitability and operational KPIs
  • A genuine passion for guest experience and service excellence
  • Exceptional stakeholder management and communication skills
