With a focus on delivering consistent, high-quality dining across a variety of outlets, the business combines premium guest experiences with high-volume service in a dynamic, seasonal market.


Job Description

This role is a key leadership position within the culinary structure, reporting to the Executive Chef and overseeing multiple kitchens across the property. A core focus of the role is leading a restaurant, an open-plan, modern Australian dining venue offering all-day service—from casual coffees and relaxed lunches through to refined dinners and late-night dining—alongside room service and bar menus across five outlets.

The successful candidate will ensure smooth daily operations, maintain food quality and consistency, and lead teams across a complex, seven-day service environment.

  • Oversee operations across restaurant, bar outlets and in-room dining

  • Lead, mentor and develop kitchen teams to deliver consistent service standards

  • Manage menu execution across multiple outlets, including casual and à la carte dining

  • Ensure compliance with HACCP and food safety standards

  • Drive organisational efficiency across ordering, rostering and kitchen systems


Candidate Profile

The ideal candidate is a strong people leader with the ability to manage multiple moving parts in a high-volume environment. This opportunity suits a Senior Sous Chef or emerging leader ready to step into a broader operational role with clear progression.

  • Proven leadership capability in multi-outlet or high-volume environments

  • Strong organisational skills across kitchen operations and team management

  • Sound understanding of HACCP and food safety practices

  • A collaborative, hands-on approach with excellent communication skills

  • Ambition and potential to step into an Executive Chef or Executive Sous Chef role
