Job Description

As the Chef de Cuisine you will lead the culinary operations of a high-quality Italian restaurant. This role is responsible for executing a refined, seasonal menu rooted in authentic Italian cuisine while maintaining exceptional standards of quality, consistency, and efficiency.

The ideal candidate brings a balance of culinary creativity, operational discipline, and leadership, with a strong understanding of California’s ingredient-driven food culture.

Key Responsibilities

Culinary Leadership

  • Oversee all kitchen operations, ensuring consistency, quality, and execution across all services

  • Execute and evolve menus in alignment with the restaurant’s Italian concept and seasonal availability

  • Maintain high standards in food preparation, presentation, and flavor profiles

Team Leadership & Development

  • Lead, train, and mentor a high-performing kitchen team

  • Foster a positive, professional, and accountable kitchen culture

  • Manage scheduling, performance, and ongoing development of BOH staff

Operational Excellence

  • Manage inventory, ordering, and vendor relationships

  • Maintain food cost targets and support overall financial performance

  • Ensure compliance with all health, safety, and sanitation standards (California regulations)

Collaboration

  • Partner closely with FOH leadership to deliver a seamless guest experience

  • Support menu education and alignment across the broader team

Qualifications

  • 3–5+ years experience as a Chef de Cuisine or Exec Sous Chef in a high-quality Italian or Mediterranean concept

  • Strong foundation in traditional Italian techniques (fresh pasta, sauces, butchery, etc.)

  • Proven ability to manage food cost, labor, and kitchen operations

  • Experience working with seasonal, locally sourced ingredients

  • Strong leadership and communication skills
